Almond Crusted Chicken

Ingredients
  

  • 4 oz Chicken Breast I made 8 breasts
  • 1/2 c almond flour
  • 2 garlic cloves finely chopped
  • 1-1/2 tsp finely grated lemon peel
  • 1/2 tsp salt adjust for personal taste
  • 1/2 tsp pepper I like a bit more spice, so add less if you do not
  • 1 large egg white
  • 1/4 c water
  • 1 tbsp olive olive

Instructions
 

  • Preheat oven to 425 degrees.  Use a cutting board to slice chicken to thin pieces (I just sliced the thicker pieces long ways).  Combine and mix the almond flour, garlic, lemon peel, salt and pepper in a bowl. Next, combine and then whisk the egg white and water.  Dip the chicken in the egg/water, then coat in the flour mix.  In a pan, heat the olive oil on medium heat.  Place the chicken in the pan and cook for 3-5 minutes.  Make sure both sides are browned. Place the chicken in a baking dish and bake for 10-15 minutes.  You may need longer if your chicken is thicker.  Always check the center to be sure it is cooked completely.
