Margherita Chicken

- Large Skillet
Ingredients
- 1-1/2 cups Wheat Penne Pasta Uncooked (Can use gluten free alternative)
- 2 tbsp Unsalted Butter or Butter alternative
- 2 tbsp Olive Oil
- 2-1/2 tsp Garlic finely chopped
- 2 cups Tomatoes chopped (I used cherry tomatoes)
- 1/2 cup Fresh Basil thinly sliced
- 1/2 cup Parmesan Cheese freshly grated
- Salt & Pepper to taste
Instructions
- Cook pasta as directed.
- Combine butter and oil in skillet and over med/high heat till sizzling. Add garlic and cook for 30 sec.
- Add tomatoes and basil and continue cooking while stirring until heated – about 2 minutes.
- Drain the pasta and add it to the skillet and stir until the ingredients are combined.
- Add Parmesan cheese and stir. Add salt and pepper to taste.
