Margherita Chicken

  • Large Skillet

Ingredients
  

  • 1-1/2 cups Wheat Penne Pasta Uncooked (Can use gluten free alternative)
  • 2 tbsp Unsalted Butter or Butter alternative
  • 2 tbsp Olive Oil
  • 2-1/2 tsp Garlic finely chopped
  • 2 cups Tomatoes chopped (I used cherry tomatoes)
  • 1/2 cup Fresh Basil thinly sliced
  • 1/2 cup Parmesan Cheese freshly grated
  • Salt & Pepper to taste

Instructions
 

  • Cook pasta as directed.
  • Combine butter and oil in skillet and over med/high heat till sizzling. Add garlic and cook for 30 sec. 
  • Add tomatoes and basil and continue cooking while stirring until heated – about 2 minutes.
  • Drain the pasta and add it to the skillet and stir until the ingredients are combined.
  • Add Parmesan cheese and stir.  Add salt and pepper to taste.
