Baked Salmon and Asparagus

  • 1 Mixing Bowl
  • 1 Baking Sheet

Ingredients
  

  • 6 oz Salmon fillets 4 total fillets
  • 1 lb Asparagus
  • 2-1/2 tbsp Olive Oil extra virgin
  • 2 cloves Garlic minced
  • 1 Lemon thinly sliced
  • Salt & Pepper to taste
  • Fresh dill sprigs, chopped fresh thyme, rosemary or parsley

Instructions
 

  • Preheat oven to 400 degrees.
  • Prepare four sheets of foil about 12 inches each. Divide the asparagus into equal portions and lay them on the foil.
  • Mix the oil and garlic in a bowl. Use 1 tsp of the mix and spoon over asparagus and sprinkle with salt and pepper.
  • Place salmon over asparagus. Spoon 1 tsp of oil/garlic mix over salmon. Sprinkle with salt and pepper. 
  • Add fresh herb choice and top with lemon slices. Wrap in foil and seal edges.
  • Place the foil pouches on a baking sheet.  Bake in preheated oven for 25-30 minutes. Remove foil and serve warm.
