Baked Salmon and Asparagus
Equipment
- Aluminum Foil
- 1 Mixing Bowl
- 1 Baking Sheet
Ingredients
- 6 oz Salmon fillets 4 total fillets
- 1 lb Asparagus
- 2-1/2 tbsp Olive Oil extra virgin
- 2 cloves Garlic minced
- 1 Lemon thinly sliced
- Salt & Pepper to taste
- Fresh dill sprigs, chopped fresh thyme, rosemary or parsley
Instructions
- Preheat oven to 400 degrees.
- Prepare four sheets of foil about 12 inches each. Divide the asparagus into equal portions and lay them on the foil.
- Mix the oil and garlic in a bowl. Use 1 tsp of the mix and spoon over asparagus and sprinkle with salt and pepper.
- Place salmon over asparagus. Spoon 1 tsp of oil/garlic mix over salmon. Sprinkle with salt and pepper.
- Add fresh herb choice and top with lemon slices. Wrap in foil and seal edges.
- Place the foil pouches on a baking sheet. Bake in preheated oven for 25-30 minutes. Remove foil and serve warm.
